This is a staple food in my household that I make about once a week. It is low in salicylates, with all foods approved by the Feingold Diet and is absolutely delicious. You can play around with it and customize the recipe to your liking, but this is the recipe that I’ve used for about ten years.

Ingredients
2 cans of tuna – It has to be packed in water, and should be Bumble Bee, Chicken of the Sea, or Starkist – these are the most common brands that can be found at any store and are low salicylate. I prefer Starkist.
1/4 Cup Best Foods Mayo (you can also substitute greek yogurt mayo for or use a combination of the two) I also tend to add an extra tablespoon or so if I need to, so adding a bit more is not going to ruin it.
2-4 stalks of chopped celery
8-10 chopped walnut halves
2/3 of one whole apple chopped into small cubes – must be peeled Golden Delicious apples *skip apples if you are in the first stage of the Feingold Diet*
1 tablespoon lemon or lime juice
Salt and pepper to taste
I mix the ingredients together and serve it on toasted sourdough bread faced up, but any bread with this is delicious. Sliced croissants are also phenomenal. The volume of ingredients don’t matter very much, so you can play around with it until you find a consistency that suits you best. If you are not in the second stage of the Feingold Diet, do NOT use apples, and if you do use apples, make SURE you are only using Golden Delicious apples and they are peeled. Apples do contain salicylates, but Golden Delicious is approved in the second stage if they are peeled. It may be a wise idea to go easy on adding the apples if you are concerned or sensitive, but many people on a low-salicylate diet handle these apples with no reaction.
